Mix this spice rub up in a jar, give it a good shake and it keep in the pantry for months (as if you won’t eat it before then!). This is an easy recipe for using it on pork ribs, but this spice rub would work well on any pork ribs, lamb ribs, beef ribs, lamb shoulder, rump roast, pork neck, chicken thigh cutlets, chicken drumsticks, butterflied chicken …. use your imagination!
1/4 cup paprika
2 tbl brown sugar
1 tbl mustard powder
2 tbl chilli powder
2 tbl cumin
2tbl granulated garlic
1 tbl cayenne
2 tbl sea salt
2 tbl pepper
1/2 rack – 1 rack pork ribs per person, depending on your hunger
Rub the ribs all over with a thin coat of your choice of oil/fat
Sprinkle the spice rub all over and rub into the meat
Cover the ribs with foil and cook in the oven at 160C for 2 – 3 hours
At the end – either finish on the BBQ for char, or open up the foil and whack the oven up to 200C to get some colour.
Serve with your favourite sides (corn on the cob is always good!)
